SHRIMP TACO LETTUCE WRAPS


Shrimp-Avocado TACOS! or lettuce wraps!


2 limes (or 1/4 cup), lime juice
1/4 cup EVOO
1 Tbsp raw honey
1/2 tsp chili powder
1/3 cup packed cilantro leaves, chopped
Himalayan Salt and black pepper ground to taste.


1 pound jumbo shrimp, cooked, peeled, deveined and chopped.
1 Hass avocado, diced
1/4 cup red onion, diced
1 medium tomato, diced OR cherry tomatoes cut in half.


Romaine, Bibb or butter lettuce.



Combine first 6 ingredients in food processor or blender (VitaMix works great!) process until smooth.


Place shrimp in a plastic bag then add 3 Tbsp of dressing and marinate in fridge for 10 minutes (or more).

Reserve remaining dressing for salad dressing drizzle.


After shrimp have marinated, coat bottom of skillet (preferably cast iron) with EVOO or coconut oil.

Sauté in two batches to avoid overcrowding the pan, for 1-2 minutes a side, or until just barely cooked through.

Set aside and cool slightly.
Toss marinated shrimp with avocado, red onion and cucumber, add more dressing if needed.


Divide lettuce leaves, fill with shrimp mixture and drizzle dressing over top.
