Ingredients:


2 cups Wild Rice Mix  -  I like a natural Harvest Medley... Thrive Market, CostCo, Trader Joe's has some good ones.  

4-6 cups chicken broth or stock

4-6 boneless, skinless fresh OR frozen chicken breasts.

4 large carrots, diced or sliced

2 celery stalks, diced or sliced

1 yellow or sweet onion, diced

herbs and spices you desire...

I use 

fresh or dried basil

Himalayan Salt

Fresh ground black pepper

Dried red onion )(really sweet flavor, found in produce section) or dried onion

Garlic powder

fresh Italian Parsley



Directions:


Add rice, 4 cups chicken broth, desired spices & herbs and chicken breasts, (frozen is fine to add) into Pressure Cooker or Instant Pot.  Cook on Brown Rice setting.


After steam release, add cut up veggies and more broth if necessary, depends how thick you want your soup. You can also take two forks and shred chicken OR cut up chicken, depending on your desired style.


Cook everything together on soup setting for about 10 minutes.


+sprinkle some more fresh Italian Parsley on top... we also like to add cottage cheese for more protein-goodness right into our fresh hot bowl of soup!
