Red Leaf Lettuce; washed, dried and torn
Bibb or Butter Lettuce; washed dried and torn
Baby Spinach can be added as well… same routine.
2 apples and/or pears peeled and sliced thin or diced (I use both.. and have added mandarin oranges as well sometimes. Depends on result you want.
3/4 cup Roasted Almonds or Pecans, sliced or chopped
1/4 cup Toasted Pine Nuts (easy to do yourself, see below)
3/4 cup Craisins, (I marinate mine overnight in Apple Cider OR the salad dressing recipe above.
I SERIOUSLY LOVE THIS SALAD! Hope you do too!
Toasted Pine Nuts: I toast mine in cast iron skillet, no oils (they have their own) with Himalayan Salt and desired herbs.
Watch closely so they don’t burn.
Toss, stir and move nuts around often… when you notice a slight color change they should be done! *I add my thin sliced almonds in here too!

Chicken, Apple & Pear Salad
(I double recipe)
1/2 cup EVOO
1/4 cup Balsamic Vinegar
2 Tbsp. minced shallots
2 Tbsp. fresh lemon juice
1/4 cup (or more) Pure Maple Syrup (Raw Honey works too, just chances flavor a bit)
1/4 tsp. ground Pink Himalayan Salt
1/4 tsp. ground Black or White Peppe
